Tucked away on a quiet street in Redfern is restaurant Bush. A small, intimate space filled with native plants, warm lighting and one of Sydney’s most Australian dining experiences.
It’s a Tuesday evening, Massive Attack and Hope Sandoval play softly over the speakers while the relaxed and knowledgeable staff take us through the menu.
“For the land, by the people.”

Bush prides itself on having a menu filled with native, Indigenous produce. Not only is the menu inventive, but it’s affordable too.
For $60, you’re given the full bush experience: Pipis with Oltra bread and native spiced butter, kangaroo steak and pepper berry sauce, with pepper berry chips and Warragal greens salad. For dessert, the Drunken Rozella and Green Ant Pavlova.
I could not fault one dish. Everything melded perfectly with each other.

The pavlova is full of flavour; green ants burst in your mouth with a zingy zest like sherbet, and the Drunken Rozella flower is sweet like candy.
The kangaroo steak is easily one of the best steaks I’ve had.
The menu is subject to change, and if you’re not keen on the set menu, there is an a-la-carte option.
Bush is open for dinner Tuesday to Saturday, 5pm–10pm at 55 George St Redfern, Sydney.
